We had to create cocktails for this Sci-Fi cult classic, and of course, we had to base them around our favorite spooks from this film too! Our first cocktail is inspired by the iconic gluttonous green ghost Slimer. We use Midori to get the classic Slimer-green look and the sweet, musk melon flavor. Combined with Peanutbutter whiskey, and Agave you get a deliciously sweet, and lightly nutty flavor that is carried through the palate with lemon juice. To get a thicker, Slimer like consistency, we blend xantham gum into the cocktail with a frothing wand. Serve it in a chilled coupe and express a lemon peel on top to brighten the whole drink and give it a little bit of e lemon scent. With this silky-sweet cocktail, you'll want to get Slimed!
The Slimer
11.5 oz (45mL) Peanut Butter Whiskey
1.5 oz (45mL) Midori
.75 oz (22.5mL) Lemon Juice
.25 oz (15mL) Agave
Pinch Xanthum Gum
Lemon to Peel
In a shaker tin, Combine 1.5 oz Peanut Butter Whiskey, 1.5 oz Melon Liqueur, .75 oz Lemon Juice, . 75 oz Agave, and a pinch of Xanthum Gum. Using a frother, froth until thick, add ice, cover and shake for 30 seconds. Double strain into chilled coupe, express a lemon peel over the drink and drop in for garnish.

Less acidic than lime juice, lemon juice will add enough acidity to brighten flavors without overpowering when balanced with sweetness. Usually our preference when needing acid to emulsify with egg white, aquafaba or cream.

A neutrally flavored and easy to grab sweetener. Golden, Amber and Dark Agave Nectars are available in the supermarket with darker versions being predictably more toasty or caramel in flavor.

Xanthan Gum
A polysaccharide that is used as a food thickening agent and stabilizer. Made through a fermentation process using xanthomonas campestris that produces the xanthan gum sugar. Found in the baking aisle at the grocery store, xanthan gum is a flavorless, fine powder. Activating xanthan gum takes aggressive agitation from a frother or blender.
