2 oz (60mL) Viking Blod Mead
.5 oz (15mL) Kirsch Liqueur
.75 oz Lingonberry Sauce
1 oz (30mL) Whey
.25 oz (7.5mL) Granny Smith Apple Juice
3 Dashes Walnut Bitters
Dropper Saline
Sage
Mild or Whey Cheese - Like Ski Queen

In a shaker tin, add 3 heaping barspoons, approximately .75 oz Lignonberry sauce and muddle. Add 2 oz Viking Blod Mead, .5 oz Kirsch Liqueur, 1 oz Whey, .25 oz Granny Smith Apple Juice, 3 dashes of Walnut Bitters, and a dropper of saline. Add Ice, a spring, and more ice. Cover and shake for 30 seconds. Double strain into a chilled coupe. Garnish with Ski Queen or another mildly sweet cheese wrapped in Sage.

3 oz (90mL) Krogstad Aquavit
.5 oz (15mL) Corriander Honey Syrup
.5 oz (15mL) Granny Smith Apple Juice
.25 oz (7.5mL) Carrot Juice
.25 oz (7.5mL) Old Sherry
2-3 oz (60mL) Wheat Beer
Fine Sea Salt
Horseradish Powder
Activated Charcoal Powder

In a mixing glass, combine 3 oz Aquavit, .5 oz Corriander Honey Syrup, .5 oz Granny Smith Apple Juice, .25 oz Carrot Juice, and .25 oz Sherry. Add ice and stir until chilled. Strain into a chilled collins glass rimmed with a salt, activated charcoal, and horseraish powder rim. In the mixing glass, pour in 2 oz of wheat beer froth and layer on top of cocktail.
