Little Neros
2 oz Gin Mare
.75 oz Amaro Montenegro
.25 oz White Crème de Cacao
.25 oz Lemon Juice
1 oz Whey from Feta (or another salty, briny cheese; preferably from Wisconsin)
.25 Roasted Garlic Clove
Handful Fresh Oregano
Sundried Tomato Oil
Hot Honey
Parmesan
Rim a coupe glass with Hot Honey and Finely Grated Parmesan. Place in freezer to chill.
In a shaker tin. Muddle Garlic, Oregano and Lemon Juice. Add Gin, Amaro Montenegro and Whey. Add ice, spring and more ice. Shake vigorously until chilled and frothy.
Double strain into prepared coupe
Drip Sundried Tomato Oil on top

Easy to make at home, hot honey syrup is a great way to add the flavor of heat that is already balanced by a floral sweetness.
4 oz (120 mL/113.5 g) Honey
4 oz (120 mL/113.5 g) Water
1 Tbs (3 g) Red Pepper Flakes
Pinch Salt
In a saucepan, combine Honey, Water, Red Pepper Flakes and Salt. Place on medium low heat and stir to combine. Allow to come to a slight boil and reduce heat to low. Cover and simmer on low for 20-30 minutes. Remove from heat and allow to cool to room temperature. Fine strain into a syrup container. Store in a cool, dark place.
