Today, we're crafting a special mezcal tequila drink inspired by The Doors movie! This easy recipe will show you how to make tasty cocktails at home. What could be better than a layered drink? #mezcal #thedoors #cocktailrecipe  

Riders on the Storm

Coconut Water Sphere 

1 oz Silver Mezcal or Sotol 

.5 oz Absinthe 

.75 oz Prickly Pear Syrup 

.5 oz Fresh Lime Juice 

.25 oz Burnt Sugar Syrup 

.5 oz Aquafaba (no egg) 

1 Bar Spoon Fine Black Salt 

Soda Water 

In a chilled rocks glass, combine 1 oz Mezcal, .5 oz Absinthe, .5 oz Lime Juice, .75 oz Prickly Pear Syrup, .25 oz Burnt Sugar Syrup and Coconut Water Sphere.  Stir until well Chilled.  Top with soda water and stir to combine.  In the shaker, combine 1 oz Aquafaba, 1 Bar Spoon Black Salt;  Using a frother, froth until very foamy and grey.  Pour onto cocktail.

  • Coconut Water Sphere

    Lightly sweet and hydrating with natural electrolytes and a refreshing softness.

  • Mezcal

    Country: Mexico 

    ABV:  84 proof/42% 

    Brand: Pernod Ricard Group 

    Spirits Type: Mezcal 

    Taste: Clean, Agave, Spice, Long Smoky Finish 

    Price Category: $ 

    Made from a blend of Espadin Agaves which are roasted in underground ovens, fermented and twice distilled.  It has an earthy smoky flavor that lingers with herbal and spice notes at the front of the palate and a slight bite at the end. 

  • Nain Rouge Absinthe

    Country: United States 

    ABV: 120 proof/60% 

    Brand: Two James 

    Spirits Type: Herbal & Spice, Absinthe 

    Taste: Fennel, Peppermint and Wormwood botanical spice

  • Prickly Pear Syrup

    Prickly pear syrup is bubblegum sweet, tart and subtly earthy.  It's magenta color has a lot of pay out impact creating a vibrant pink cocktail with a delicious, but not lingering flavor. 

  • Burnt Sugar Syrup

    Bittersweet and aromatic, burnt sugar syrup has the flavor of a deep caramel but a bittersweet finish from acrid carbon.   

    To make Burnt Sugar Syrup: 

    1 Cup Brown Sugar 

    Heavy Pinch Baking Soda 

    .75- 1 Cup of boiling water 

    In a heavy sauce pan, heat sugar and baking soda over medium-high heat, allowing it to liquify and melt.  Continue cooking until it is a dark, amber color.  Be patient, it will take quite a bit of time, especially at altitude.  Once it begins to foam remove from heat and carefully, in small batches add water and stir vigorously.  The sugar will harden, but then eventually melt back in.  Allow to cool to room temperature, store in the refrigerator until time of use. 

  • Aquafaba

    An Egg White Substitute for cocktails.  Aquafaba offers a silky texture that is slightly savory and can be aerated or shaken to create a cocktail foam.   

    To Make It: 

    1- 15 oz can Garbanzo Beans/Chickpeas 1  

     barspoon Cream of Tartar   

    Strain out the chickpeas using a fine mesh strainer. Pour chickpea brine in a clean and dry condiment bottle, add 1 tsp cream of tartar and stir gently to combine. Seal and store in the refrigerator for 2-3 weeks. * A note on using aquafaba for cocktails: Gently swirl prepared aquafaba before use to redistribute the settled cream of tartar; acid such as citrus juice will be necessary for frothing emulsion.

  • Black Fine Sea Salt

    Salt that has been blended with activated charcoal then dried and flaked.  Used for its drama on the rim of a glass or dropped on top of foam or over a cube.  The additional salt will enhance flavor in the cocktail, especially citrus.

  • Soda Water

    Sparkling water is a great neutral mixer that will lower overall ABV while highlighting the flavor of the spirit.  The effervescence adds a texture and interest of a drink while masking some of the bite associated with grain alcohol.
