1.5oz (45mL) Cynar
1.5oz (45mL) Kiwi Juice
1 oz (30mL) Agave
2 Dashes Peychaud's Bitters
2-3 Dashes Habanero Bitters
Top Cava
In a shaker tin combine 1.5 oz Cynar, 1.5 oz Kiwi Juice, 1 oz Agave, 2 Dashes Peychaud's Bitters and 2 Dashes Habanero Bitters. Add ice, cover and shake for 30 seconds. Double strain into a chilled goblet. Top with about 2 oz of chilled Cava. And garnish with a kiwi wheel.

A low sugar, low alcohol bitter amaro. Made by macerating artichokes along with other plants, herbs and spices in a neutral grain spirit in two stages over several weeks. It is filtered and then blended with sugar, water and caramel color for balance. The bitterness of this amaro is pronounced in the sides of the mouth with a lightly sweet, vegetal and earthy flavors that can open up in the middle of the palate.

Peychaud's Bitters

Buffalo Trace Distillery
Originally sold as an apertivo in French New Orleans, Peychaud's is a gentian-based bitter which is characteristic of strong anise or fennel flavors. Additional botanicals contribute to it's light mint flavors. Peychaud's adds a nice red color while freshening a cocktail with just a few dashes.

A sweet-tart balance that is bright, citrusy, and mildly melon-like. Kiwi Juice can add a bright green color to cocktails and enhance herbal liqueurs.

A neutrally flavored and easy to grab sweetener. Golden, Amber and Dark Agave Nectars are available in the supermarket with darker versions being predictably more toasty or caramel in flavor.
